The building's management plan should also be checked for any provision restricting restaurant use. Electrics, Flue and Wastewater<\/h3>\n\n\n\n

The premises' electrical capacity, the flue route for the kitchen exhaust, the availability of natural gas and the wastewater infrastructure directly determine whether the restaurant can operate. Some of these gaps can be remedied later; others are permanent limits arising from the premises themselves.
