In Ankara in 2009, we developed an example of kebab house design in Edessa Kebab, reinterpreting the traditional kebab house atmosphere through contemporary restaurant architecture, a perspective that guided all our design decisions.
Materials and the Open Kitchen in Kebab House Design
We used brick surfaces, accompanied by natural timber, patterned floors and dark tones, bringing them together around an open kitchen to create a warm, characterful, timeless atmosphere. In a kebab house, an open kitchen makes cooking part of the design of the space, so we created a strong visual relationship between kitchen and dining room, and kept the materials and floor patterns consistent with it.
A Timeless Architectural Language in Kebab House Design
We designed the project in 2009, yet created an architectural language that still looks current today, supported by the material choices, a strong rhythm and a timeless spatial layout. As a global movement supporting authentic food culture also suggests, a timeless design language represents deep-rooted culinary traditions more strongly. This matches Edessa Kebab's design philosophy directly, and our lighting scheme supports this timelessness too.
Every material was chosen to support this timeless language, and the lighting was designed to strengthen the warm atmosphere. You can explore similar work on our restaurant and café projects page. We kept the same warm language in the seating layout too. In busy venues like a kebab house, as restaurant interior designers we prioritise the relationship between kitchen and dining room.
Conclusion: A Timeless Kebab House Design
At Edessa Kebab, CO Mimarlık developed a kebab house design that combines materials, kitchen layout and atmosphere in a single experience, a design approach that stays current as the years go by and a timeless balance guests feel the moment they step inside. Over time, Edessa Kebab has become one of Ankara's long-standing venues, still drawing the same interest years later; tangible proof that good design does not lose its meaning over time.
